“French Spice” participant Villa Azur restaurant: The vibe of South of France in Miami Beach
With striking decor, great atmosphere and service, Villa Azur offers a reminiscent South of France experience. In this interview, Executive Chef Mickael Bensa of Villa Azur unveils its “French Spice” menu honoring typical Provencal dishes.
e-Toile: Can you describe Villa Azur to our readers?
Catalina Carracedo*: Villa Azur’s vibe is that of the Southern France; the vibrant 7,206 square foot restaurant is adorned with Parisian glamour and contemporary elegance. White French doors and chandeliers welcome guests to a beautiful lounge and main dining area shadowed by the most glamorous open-aired courtyard in South Beach. DJ Olivier’s selection sets the mood as he creates an energetic, chic dining ambi- ance. With striking decor, great atmosphere and service, Villa Azur offers a reminiscent South of France experience.
Executive Chef Mickael Bensa and his culinary team combine the freshest ingredients and most delectable flavors with an international and contemporary twist.
Influenced by Mediterranean cuisine, its menu creates the perfect blend of savors paired with handpicked European wines bound to please every gourmand’s palate.
Of course, I suggest that you end your feast with a sweet creation prepared by French Pastry Chef Sebastien.
e-Toile: Why have you chosen to participate in “French Spice" of "French Week Miami" 2012?
Chef Mickael Bensa: As far as I know, French Spice promotes the best French dining experiences in Miami. In my opinion, Villa Azur falls in that category and I would love for people to come by to try the dishes that I plan to prepare for the French Spice menu.
e-Toile: What are the menus and wine lists you will provide for the event taking place November 1st through the 30th ?
Chef Mickael Bensa: Most items on the menu are typical South of France cuisine that will be prepared with the freshest ingredients on the market.
For starters, guests can choose between a delicious savory Pissaladière niçoise tart on a bed of arugula and tomatoes or Assiette Gourmande Salad with green beans, tomatoes, spring mixed greens, and foie gras shavings.
I will also be preparing two entrees: Mussels Marinières with French fries and Skirt steak with shallot marmalade and mashed potatoes.
And for dessert one of my personal my favorites, a deliciously light Nutella Mousse.
e-Toile: Which particular dish would you recommend and which wine should accompany it?
Chef Mickael Bensa: I love Mussels Marinières with Homemade French Fries. It is a simple yet flavorful dish that may be accompanied by a crisp, dry and refreshing white wine. I would suggest the Sauvignon Blanc, Le Chezal, Sancerre-Loire Valley in Central France. The perfect orchestra!
